Contrary to what most people think, you don’t have to spend a fortune in order to put together a delicious, nutritious meal that will have people asking for more. With a little strategy and the right recipes, you can spend very little money while whipping up healthy, tasty meals. Below are some of the cheap recipes for meals that won’t break the bank.
1. Unstuffed Cabbage Roll
• Ground beef, 2 pounds
• 1 chopped small head cabbage
• 1 large onion, chopped
• Tomato Sauce, 1 8-ounce can
• Diced Tomatoes, 2 cans
• 1/2 water
• 2 cloves garlic, minced
• 2 tsps salt
• 1 tsp ground black pepper
i) Heat a large skillet over medium heat and cook beef and onions while stirring until browned and crumbly.
ii) Add tomatoes, cabbage, tomato sauce, garlic, salt, pepper, water then boil.
iii) Cover the skillet and let simmer until cabbage is tender.
2. Vegetable Stir-fry
• 2 cups brown rice
• 2 cups vegetables, chopped
• 1/2 package tofu
• 1/4 cup sesame ginger dressing.
i) Boil the brown rice in a pan.
ii) Microwave vegetables until they’re tender.
iii) Heat 1/4 cup sesame ginger dressing on a skillet. Add the vegetables and chopped tofu and heat for 3-4 mins.
iv) Serve rice on plates, scoop tofu and vegetable mix on top.
3. Semi-dried Tomato Braised Beef and Potato Stew
• 1 1/2 cup beef stock
• 60g semi-dried tomatoes
• 1 tbsp olive oil
• 2 cloves garlic
• 500g casserole steak
• 1 small onion, chopped
• 3 sprigs rosemary
• 600g potatoes
• 1 stick celery
• 1/2 cup water
i) Simmer beef stock in a small saucepan over high heat. Turn off the heat, add garlic and semi-dried tomatoes, leave to soften. Put the mixture in a blender and puree until smooth.
ii) Heat a heavy pan over high heat, add oil and hear until hot. Season steak with pepper and salt, then add to the hot oil until they brown.
iii) Add the onions and lower the heat to medium. Cook for 4 minutes until the onions soften, then add celery and cook for 3 minutes.
iv) Add rosemary and cover, let it simmer for 45 minutes until steak softens.
v) Add potatoes and half a cup of water then cover and leave to cook for 20 minutes.
vi) Remove rosemary and serve.
4. Rice with Fried Egg and Avocado
• 2 cups cooked brown rice
• 4 scallions
• 4 eggs
• 1 avocado, chopped
• 3 tbsp olive oil
• 1 tspn red wine vinegar
• Pepper, freshly ground
• Hot sauce (for serving)
i) Mix rice, scallions and vinegar in a bowl, season with pepper and salt.
ii) Heat olive oil in a non-stick skillet over medium heat, crack eggs into it. Season with salt and pepper until whites are set around the edges. Flip the eggs.
iii) Serve the rice, top with the eggs and avocado.
All these recipes are cheap, simple and easy to make with largely accessible ingredients and tasty results. They’re not just useful for when you need to use little money, but also when you’re out of time.
